WHO SAYS CARROT CANNOT BE WHIPPED UP INTO AN EXCITING MEAL?

Do you know that carrot contains vitamin A that is good for your child's eyesight? Carrots are crunchy and colorful vegetables. Plenty of nutrients can be obtained when your child consumes carrots. Nutrients such as beta carotenes, fiber, vitamin K, potassium and antioxidants can be provided just by consuming carrots. Most of us (yes, you as parents/caregivers) tend to add carrots in soup, porridge, coleslaw and stir-fried dishes but do you know that carrots can also be mix with tuna as a simple, quick snack or light main meal.
Here's a simple recipe for our readers, courtesy of Nutrition Society of Malaysia.
Carrot -tuna recipe
Ingredients:
4 pieces tortillas
1 can of tuna in water (try to choose tuna chunks/tuna flakes in water as it has less calories and more omega-3)
2 tablespoons mayonnaise (can replace it with plain yoghurt)
4 pieces of lettuce leaves
1 whole carrot
Methods:
Open the tuna can, drain the water and flake the tuna chunks with a fork. If it is tuna flakes, then you might not need to shred into finer pieces.
Peel the carrot and grate it.
Place 4 tortillas on 4 different flat plates
Spread the mayonnaise on each tortilla with a spoon
Place 1 lettuce leaf on each tortilla.
Arrange the carrot lengthwise in rows near the edge.
Spoon the tuna in a line next to the carrot, away from the edge.
Roll each tortilla up tightly into a medium sized cyclinder.
Preheat a frying pan and then put the rolled up tortila onto the pan for a few minutes.
Remove the heated tortilla and cut each tortilla into half and serve on a plate.

So simple and quick to make. You can even get your young ones to make their own rolls.
