Have you ever had moments when you realized that you have plenty of leftover apples which will soon turn rotten if not eaten up? Yup, those are the moments when you need to think of ways to not waste the apples. Yes, you can just cut them into cubes and have them served as healthy snacks for your kids (crispy and delicious!) or even have them turn into juice, via a juicer or blender. But, you can also varied ways of eating apples. One of the ways is to bake them into muffins.
Apples are known to be a source of fibre, vitamin C and phytochemicals.
You can use either green or red apples for this recipe. This recipe was modified from the following website: http://allrecipes.com.au/recipe/9783/custard-and-apple-muffins.aspx

Apple custard muffin recipe:
Ingredients:
2 cups (250g) self raising flour
1 cup (125g) plain flour
1/2 cup (90g) brown sugar (can be reduced to 70g when serving to your children <5 years old)
1/4 cup (40g) custard powder
100g butter, melted
1 cup (250ml) milk- do take out the milk from the fridge earlier so that the milk is at room temperature when you want to pour the milk into the mixture
1 egg, beaten
2 large apples, grated
3/4 cup white chocolate bits
Topping:
1/4 cup white chocolate bits
1 apple grated
2 tablespoons of brown sugar (to omit if you are giving to children <5 years old)
** you can even improvise with oat crumble topping (do refer to the previous recipe in this website on how to create oat crumble topping).
Once you have prepared the ingredients for mixing, do start pre-heating your oven to 200-degree celcius.
Method:
Preheat oven to 200 degrees Celcius
Combine the self-raising flour, flour, sugar, and custard powder together.
Melt the butter. There are plenty of ways to melt butter. You can melt the butter on the stovetop but I prefer to melt the butter over warm water. Just place the butter in a ziplock bag into the hot/warm water.

4. Fold in the melted butter, milk, egg, sugar, apples, and white chocolate bits.
5. Spoon into grease muffin tins.
6. Combine the topping ingredients and spoon a little in each muffin.
7. Bake for 25 minutes.
Final product.....

Kids will love the chocolate bits. Juicy and dense on the inside but sweet taste for the topping.
